A new rooftop bar opens in Adelaide tonight, offering the best of South Australia served up in an exclusive five-star setting.
The Hennessey is the latest small bar to hit the West End, courtesy of the Mayfair Hotel on the corner of King William and Hindley Streets. Managing Director Martin Radcliffe told Inside South Australia the bar will be using South Australian products and ingredients wherever it can.
““We try to use South Australian ingredients… Adelaide is on the crest of a wave as far as interstate and international visitation goes, and the reason a lot of those people are here is that they want to try South Australian produce,” he said.
That produce has been used to create an extensive cocktail list, featuring classics and new inventions, as well as bar snacks and a predominantly South Australian wine list.
“Our list is 95% South Australian… we’ve got a really boutique, extensive local wine list.
“We’re (also) one of the few bars in the city to invest in an enomatic wine machine… you can open a bottle of Grange or Barossa basket press and can serve it by the glass, but keep it at a really high quality for people coming down the line.”
Marin joined the Mayfair Hotel in July as part of a new management team. When he sat down with the owners to look at the hotel’s offerings, their attention quickly turned to the rooftop space.
“We thought, ‘how beautiful is this space’. The original intention was that it would be an exclusive guest lounge… but it was just too beautiful a space not to share.”
No expense was spared kitting out the thirteenth floor of the hotel. The team installed a 10-metre, 50-tonne Italian marble bar, as well as chandeliers with 250 crystals in them each.
“We (wanted) to create a classy, sophisticated, fun bar, where people could be entertained… in intimate circumstances or in a big celebration. That’s the beauty of the space up there… there are four interlocking spaces, so its not just a conventional rooftop.
“If you want a quite drink there are pockets of the bar you can have that intimate experience, or if you want to have forty colleagues up to celebrate on our deck, you can do that as well.”
The Mayfair Hotel opened in January and has quickly become a favourite with both business travellers and tourists wanting a more boutique experience. Martin says it is no accident that the Mayfair is located in the centre of Adelaide’s small bar hub.
“When the owners bought the property all those years ago they were just waiting for the right time to convert it to a hotel. From a bar perspective it couldn’t be better… you’re right close to the riverbank, opposite the mall, and slap bang in the middle of the West End.
“Adelaide is on the up at the moment with everything that is going on with the cafe and restaurant scene, right down to the riverbank precinct… there is a real buzz about the place.”
